While ago I promised to give
engenda my recipe for vegetable frittata. It's actually a recipe for leek, spinach and mushroom frittata, but I usually substitute the leek, mushroom and spinach for red oinion and a couple of cups of mixed vegies like broccoli, cauliflower, pumpkin, etc. Whatever I have in the fridge at the time. I just chop them into bite-sized pieces and steam until tender, then add them to the egg mix with the sautéd mushroom and onion. The beauty about this frittata, though, is that it's baked, not fried, so it's relatively low in fat, and it makes a great packed lunch for work.
