Still no word about the job and now I'm v. stressed about my next assignment because I didn't do as well as I hoped I would in the last one. I really don't get this subject, but I don't particularly want to do it over either. I will if I have to, but jeez Louise, it's driving me batty.

Must go and have a shower. I'm meeting my study partner at midday and we're going to try and nail this thing.

So, instead of homework I'm cooking. Sticky date puddings. Perfect for a cool autumn (or spring, depending on what side of the world you're living in) evening.


Yummy Sticky Date Puddings

2 cups water
180g pitted dates
1 tsp bicarbonate of soda
75g butter
155g soft brown sugar
2 eggs
170g self-raising flour
1 tsp vanilla essence

Pre-heat oven to 150C. Grease a 12-cup muffin pan, or an 18-20cm square or round cake tin.

Combine water, dates and bicarbonate of soda in saucepan. Bring to boil and simmer for about 5 minutes. Remove from heat and allow to cool.

Melt butter and add it and remaining ingredients to cooled date mixture. Stir well. Divide mixture evenly between muffin holes or pour into prepared cake tin.

For muffins, bake for 20-25 minutes or until tops spring back when lightly pressed. For cake, bake for 45 minutes.

Serve warm with cream, toffee sauce, or a good vanilla ice cream. Or all three if you're so inclined!


Toffee Sauce

200g soft brown sugar
100ml cream
100g butter
1-2 tsp vanilla extract

Combine all ingredients in a saucepan and stir well to dissolve sugar. Bring to low boil and boil for 2 minutes without stirring.
