I made these to take over to a friend's house today and they were so yummy I just had to share the recipe with you.
Gingernuts
1 cup plain (all purpose) flour
2 tablespoons sugar
1 teaspoons bicarbonate of soda
1 teaspoons mixed spice
1 teaspoons cinnamon
1-2 teaspoons ground ginger, depending on how gingery you like them
60g butter
2 tablespoons golden syrup
Extra ½ cup sugar (optional)
Sift flour and spices together and stir in sugar. Melt butter with golden syrup and pour into dry mixture. Mix well and roll into walnut-sized balls. If liked, roll balls in extra sugar before placing on greased baking tray. Press balls down lightly and bake in a very hot oven (230C/450F) for five minutes, then reduce the heat to moderate (180C/350F) and cook for a further 7-10 minutes. Makes around 20.
